Heat oil in a pan.
Add mustard seeds once it is hot.
Add chopped green chilies, curry leaves, some chopped cilantro leaves, turmeric and asafoetida.
Add boiled and mashed potato to this and add salt as per taste.
Stir well. Cover and keep it on low flame for 3 -4 minutes.
Add more cilantro on top and add fresh lemon juice fora nice taste.
Now put out the gas stove and serve with rice, chapati or thepla.
