Sweet Red Poha with Jaggery

This is a quick healthy recipe which we used to have for the evening snacks as it is very healthy and easy to make. Red poha is flattened from brown rice thus it is rich in fibre, vitamins, minerals and antioxidants. It is high in fibre thus it helps you feel full for a longer time and helps digestive health. It has antioxidants which helps to prevent cancer. Red poha is a good source of healthy carbohydrates. It is rich in iron, vitamin B, magnesium, zinc, and calcium and is an excellent probiotic.
I am from the coastal area where fresh coconut is easily available and we would get red poha which was hand pounded from the farmers directly so the taste was amazing. This is a very healthy recipe for kids  as  it has  jaggery which gives iron. Coconut and red poha are healthy as well. So do make this for kids

Ingredients

  • 1 cup red poha
  • 1/4 cup jaggery as per your taste you can increase it or decrease it
  • ¼ tsp cardamom powder
  • 1/2 cup freshly grated coconut
  • 1 banana sliced.
  • 2 tbsp cashews or any Dry fruits of your choice optional.
  • ¼ Cup water to soak Poha.
  • Salt.

Instructions

  • Wash red poha thoroughly .
  • Easiest way to wash is to put poha in a sieve and keep it under running water.
  • Add 2 tbsp of water and some salt and keep aside for 10 minutes.
  • Mix together freshly grated coconut, jaggery and cardamom powder.
  • Add coconut jaggery mixture to the pre soaked poha.
  • Top it with dry fruits and sliced bananas.
  • Mash a few slices of banana to get sweetness and nice texture to this recipe.

Notes

This recipe  cannot be  stored  for a long time so consume it within 1 hour.
It gets spoiled within 1 to 2 hours as it is not cooked and  water is also added.
