One pot Chickpea Quinoa meal

Ingredients

  • 1/4 cup boiled chickpeas
  • 1/2 cup half cup cooked quinoa
  • 1 tsp one teaspoon oil
  • 1 tsp one teaspoon cumin seeds
  • 2 tsp one teaspoon chopped green chilies and Ginger
  • 1/4 cup chopped capsicum
  • 2 tbsp chopped carrots
  • 1/4 cup tomato
  • 1/4 tsp turmeric powder
  • 1/2 tsp half teaspoon red chili powder
  • 1 tsp cumin seed powder
  • salt to taste
  • lemon juice
  • black pepper
  • mint leaves optional
  • pomegranate seeds optional

Instructions

  • Take a pan ,add oil, and keep the gas stove low.
  • once the oil is hot and cumin seeds
  • Add chopped green chili and Ginger
  • Add chopped capsicum, carrots ,beans and all the vegetables of your choice.
  • saute for 1 to 2 minutes
  • Add chickpeas and tomatoes.
  • And salt, cumin seed powder, red chili powder and turmeric
  • Saute for 1 to 2 minutes and cover and cook on a low flame for 2 minutes
  • Add cooked quinoa, mix well and cook for another 2 minutes
  • Add lemon juice, pomegranate seeds, and nuts of your choice ,chopped mint before serving.
