Take a pan ,add oil, and keep the gas stove low.
once the oil is hot and cumin seeds
Add chopped green chili and Ginger
Add chopped capsicum, carrots ,beans and all the vegetables of your choice.
saute for 1 to 2 minutes
Add chickpeas and tomatoes.
And salt, cumin seed powder, red chili powder and turmeric
Saute for 1 to 2 minutes and cover and cook on a low flame for 2 minutes
Add cooked quinoa, mix well and cook for another 2 minutes
Add lemon juice, pomegranate seeds, and nuts of your choice ,chopped mint before serving.
