Moong bean curry

It is vegan, simple, delicious and easy to make curry. Include this gut healthy nutritious moong in your diet through this recipe

Ingredients

  • 1 cup sprouted moong
  • 4 cups water to cook
  • 4 green chillies
  • Salt to taste
  • 1 tbsp oil
  • 1/4 tsp mustard seeds
  • 8-10 curry leaves
  • Pinch of asafoetida
  • 1/4 th tsp turmeric powder
  • 1 tsp roasted cumin powder
  • 1 tsp red chili powder
  • 1 tbsp chopped ginger
  • Chopped cilantro
  • 2 tbsp Lemon Juice

Instructions

  • Rinse the moong with water 2 times
  • Soak the moong overnight in water. Water should be 4 times the quantity of moong as moong will swell after soaking
  • Drain the water and Keep moong aside for 4-6 hours for germination.
  • Take 1 cup of moong in a pressure cooker and add 4 cups of water, 2 green chilies slit and little salt for taste.
  • Cook moong for 1-2 whistles only. Do not overcook.
  • take a pan and add oil.
  • Once oil is hot add mustard seeds,
  • After they splutter add 2 sliced green chilies, chopped ginger, asafoetida, curry leaves and roast this for 1-2 minutes.
  • To this add the turmeric powder, red chili powder, roasted cumin seed powder, add some water and cook all the spices together.
  • After 2-3 minutes add the cooked moong to this.
  • Stir well. Add salt as per taste.
  • Stir well and let it cook for another 2-3 minutes until it absorbs all the flavor.
  • add the chopped cilantro, squeeze the lemon on it.
  • Stir well and serve hot with rice, roti, bhakari
